Southwest Salad with Chipotle Lime Ranch Dressing

Need a different idea for Taco Tuesday? How about a healthy southwest salad with a smoky, spicy ranch dressing? This salad is for my taco lovers who want a healthier version without giving up those flavors we all know and love!

Lets start with the dressing! Who doesn't love ranch?! Its creamy, savory, and full of fresh herbs. Well, for this southwest salad, we are making it tangy and smoky! My Chipotle Lime Ranch Dressing adds the perfect amount of acid and spice to the hearty black beans, creamy avocado, and fresh corn and tomatoes that are on this salad. And, it is extremely easy to make, no blender or food processor required!

This salad's base is crunchy romaine hearts, my favorite! You can definitely substitute the lettuce for white rice and make this a burrito bowl instead. The Chipotle Lime Ranch Dressing is amazing on rice too! For my salad I added black beans, corn, tomatoes, avocado, green onion, cilantro, and crunchy tortillas strips. I love serving this with a fresh strawberry lemonade kombucha with some lime slices. YUM!


Southwest Salad with Chipotle Lime Ranch Dressing

Salad:

3 romaine hearts, chopped

1 cup black beans, canned, drained/rinsed

1 cup corn

1 tomato, chopped

2 avocados, chopped

1/4 cup green onion, chopped

1/2 cup tortilla strips, salad topper **


Dressing:

1/2 cup vegan mayo **

1/3 cup vegan sour cream **

1 1/2 limes, juice

2 tsp maple syrup, pure

2 tsp cilantro, fresh, minced

2 tsp chives, fresh, minced

2 tsp parsley, fresh, minced

1 tsp chipotle chili powder

1/2 tsp garlic powder

1/4 tsp salt


Directions

1. Chop all vegetables for the salad and ensemble in a large serving bowl.

2. Mix together all dressing ingredients in a bowl until well combined.

3. Dress salad with chipotle lime ranch and serve immediately. Enjoy!


Notes

** These can be found in the produce section of your grocery store on the bottom shelves under the produce or on end caps. Or you can make your own tortilla strips or use crushed up tortilla chips!

** My favorite vegan mayo is the Hellman's Vegan Mayo.

** My favorite vegan sour cream is the Tofutti Vegan Sour Cream.
